I've found a really useful paper (as a pdf document) that people might be interested in, it's called "Toxicology of Aquarium Fish".

It was written by vets for vets, but it isn't too technical and has sections describing the symptoms caused by a wide range of toxic substances, from ammonia through to pesticides and household cleaners.

Therefore, a complete water quality evaluation should be performed in every case presenting to the fish veterinarian. Acute exposure to poor water quality can result in sudden and significant mortality. Chronic exposure to suboptimal water quality conditions can cause immunosuppression and predispose fish to a variety of infectious diseases that ultimately lead to mortality. Common water quality–related toxicities in aquarium fish include pH, ammonia, nitrite, nitrate, chlorine/chloramines and hydrogen sulfide.
