A few pointers
Plan your talk using Power Point even if you going to just do a talk the slides can be printed out and used as crib sheets.
Start with a very general over view of the subject
Break down the subject in to as few sub subjects as possible
I.e. for fish I would suggest that you having picked a genus give a very brief over view of were the genus fits in its family and then break things down in to care and habitat water conditions ECT then feeding, breeding & care of the fry
