well ask lots of people and you will get differeing ideas and opinions.
i think some mature water can help if excessive w/c being done as it contains some microbes that are good for the fish - but yes does not populate the filter with bacteria but does feed it. taking gunk from another filter will help to introduce bacteria which will hopefully stick in your filters a bit, there is no perfect option but sounds like you are doing the right things.
might help if you can post a pic of thetank so we can get a feel of it better?

the problem with just having the gunk is that it will increase the levels before dropping them but i do hope all works out for you!
when your doing your water change try not to blast the water in the tank (try not to disturb your substrate )

all the best!

nice set up. assuming they are real plants they will help to absorb some unwanted chemicals. looks like quite a lot of fish in it but not over crowded. let us know how it settles. good luck

thanks for all the advice guys i did a water test this morning my ph seems to have settled down my nitrate was just a little high but my ammonia stil quite high im doing daily water changes with prime and ive also got some zeolite coming so hopefully im getting there ive had no more die but you can see me plecs breathing quite fast due to the ammonia level and also my ph and nitrate was al over the place last wk so surely thats a good sign its starting to calm down
A fluctuating pH would point to a different problem all its own & could be a contributing factor to the deaths. What is the pH & how much has it been fluctuating? What are the other water parameters, specifically kH & GH?

yeh id say it was at least 9 last week and now its down to 7.6
How long did it stay that high?
How quickly did it change, both in going up & coming down?

pH is on a logarithmic scale so the difference between a pH of like 8 & 9 is a 10-fold increase. Would definitely contribute to deaths especially if it occured quickly. Could it have been from using water from you friend's tank. Definitely something I'd look at & try to figure out so you don't get the same problem happening again.
